Toward a Plant-Based Food System
A growing scientific consensus points to the need to shift to a predominantly plant-based diet in the interests of planetary and public health. But why exactly? And what should and could a plant-based food system look like? What are some of its challenges and drawbacks? This talk sketches out the big science and social science questions around large-scale shifts in food production and consumption and also the contours of what a more sustainable food system might look like.
